"Raw nuts? Never thought about nuts being raw or -- pasteurized," a relative says to me.
Yeah, the concept was new to me a year ago as well. Most people are not aware that nuts are generally pasteurized, like milk and juice. They are pasteurized in order to destroy bacteria, but in the process the live things in food that provide health benefits are also killed. A lot of people ignore raw nuts even if they see them because they don't understand why they are more expensive. They cost more because there are strict regulations as to how things are handled in order to be considered 'safe' without the pasteurization process.
Many people who think they are allergic to nuts or dairy actually just have trouble digesting foods that no longer are alive. The enzymes that are bound during cooking or pasteurization play a large role in digestion, and without them, food is not properly broken down. This leads to a ton of negative things throughout the entire body, and has chain effects that would take a letter five times this long to fully explain.
But in short, raw nuts, like most everything, have more flavor, vitality, and nutrition than pasteurized nuts. Not every store sells them; usually stores that specialize in organic produce will have at least one type of raw nut.
A lot of the recipes on my site call for raw nuts. I believe they can be ordered online if they can not be found in a nearby store.
